As a fan of Top Chef Texas, I have to admit that I was excited to see what Chef Paul Qui (East Side King and Qui) would prepare at Meatopia. He chose to cook a traditional Filipino street food dish called sisig that is made from pig’s head and is pan fried with chile, garlic, vinegar and lime juice. I really liked the light crispiness of the dish, which Chef Qui said came from the different fatty parts of the face. This was dish was one of my favorites from the entire event.
I have yet to try the East Side King or Qui, but if his street food dish at Meatopia is any indication of the quality of those restaurants, I am sure that I will be blown away.
