While it was exciting to have Meatopia in San Antonio, imagine what it must have felt like to have the event on your doorstep. Literally. Chef Jesse Perez set up his outdoor grill in the shadow of his restaurant Arcade Midtown Kitchen. Chef Perez prepared a Broken Arrow Ranch quail and flank steak, along with some short ribs with a mole rub went fast (I missed out on them).
To get a little respite from the South Texas sun, I interviewed Chef Perez inside his restaurant. While he has an incredible attention to detail and a keen eye for design, the quality that stood out was his focus on incredible service. While we were setting up to film him, he made sure that it was OK with his diners and asked how their meal was. Chef Jesse is a product of San Antonio and happy to be home; his love for his hometown shines through in both his personality and food.
